CRISPY PORK BELLY WITH BBQ SAUCE

"This is the best Pork Belly I've ever made"

Serves 4 to 6
Prep Time: 15 minutes
Cooking: 1 hour
Ingredients:
Pork Belly (approx. 1.2kg)
1 teaspoon Fennel Seeds
1 teaspoon Salt
1 teaspoon Fuego Spice (From All The Flavours)
2 tablespoons Vinegar
For the BBQ sauce:
1 chopped Chilli
3 minced Garlic Cloves
1 tablespoon minced Ginger
1 tablespoon Gochujang Paste
2 teaspoons Fish Sauce
1 tablespoon Sesame Oil
Method:
Line the Air-Fryer basket with Foil. Score the skin of the Pork Belly using sharp knife and rub the fennel seeds, salt and the Fuego spice all over the pork.
Place the pork in the basket and air-fry at 200°C for 20 minutes. Brush the top of the pork with the vinegar and cook at 180°C for 40 minutes.
Place all the ingredients for the sauce into a bowl and air-fry at 180°C for 8 minutes.
Cut the pork into squares when done and serve with your choice of rice (preferably jasmine rice), steamed tenderstem broccoli and the BBQ sauce drizzled over top.
