Loaded Sweet Potatoes

Savoury, healthy and totally delicious. This easy weeknight dinner is gluten-free and easy on the budget without skimping on big flavours.



























Prep time: 15 minutes

Cook time: 30 minutes

Servings: 4-5

Ingredients:

  • 4 large sweet potatoes

  • 500g lean ground beef

  • 250 g chopped tomatoes

  • 1 small onion, diced

  • 100g frozen corn

  • 15g taco seasoning

  • 50g ready-made salsa

  • 100g sharp cheddar, grated

  • 1 ripe avocado, mashed

  • Salt & pepper to taste

Method:

  1. Microwave sweet potatoes on high for 10-15 minutes or until tender.

  2. Sauté onions and add ground beef, taco seasoning and chopped tomatoes.

  3. Add frozen corn and allow to cook through.

  4. Prepare a quick guacamole by mashing the avocado and seasoning to taste.

  5. Slice the sweet potatoes lengthwise and fill with the ground beef filling. Top with grated cheddar, guacamole and salsa.

Tasty tip: for a nice zing, add sour cream as a topping.
